Antonia Lofaso

Curiosity grew in her after she moved from the Long Island suburbs to explore the diverse culture of Los Angeles. Cavatellis and carnitas coexisting on the same menu is her ideology. What remains, however, throughout her menu is an unifying vision of the future, while also reminiscing about the past. Scopa Italian Roots is a restaurant which was established by Lofaso in 2013. She opened it due to her heritage as an Italian-American. Lofaso is lauded for her interpretation of traditional Italian dishes. Lofaso consistently serves excellent dishes at Scopa it is a local favorite. The patrons call it authentic and satiating. Lofaso had been an apprentice of culinary experts, absorbing their techniques as well as taking risks. She never hesitated in doing so, merely following her instincts. In a short time her career, she was at the top at Wolfgang Puck's Spago. Later she worked with many famous celebrities while transforming various Los Angeles restaurants. In 2011 Lofaso worked with Sal Aurora and Mario Guddemi to open Black Market Liquor Bar in Studio City. The bar was eventually able to get an outlet in Black Market as well as the partnerships she established. The partnership would allow for creativity and freedom Lofaso desired. Black Market's intention is not to limit itself by any means. The book contains her personal story of the obstacles she faced while studying at an institution called the French Culinary Institute and raising her daughter Xea. Lofaso claims that her enthusiasm in cooking is the primary force behind her achievements. She stays in the know by keeping a close eye on trends and fashion. With her Chefletics brand, she is changing the look of the industry, by creating clothes for the kitchen that are stylish as well as practicality. Lofaso will adhere to the vision of her customers.
